The sign in front advertises "Slow Smoked" & "Hickory Smoked Pit Bar-B-Q." This was the reason I stopped in, ordered the Valdez Smoked Combo. However, none of the brisket, ribs or chicken had any smoked flavor or juicy slow-cooked-in-a-pit tastiness. The brisket was not tender, none of the fat had been emulsified in an expert slow-cooked in a pit manner. There was no detectable smokiness, especially not sweet hickory. The ribs were tender and juicy but more from a teriyaki style of preparation and not from classic pit BBQ techniques. The chicken was a tough ball of boneless breast meat. All of the meats came slathered an overwhelming but good habanero sauce, similar to a buffalo wing style of preparation. Good BBQ should be served with sauce on the side. You spend over 20+ hours slow smoking meat in a pit, you want people to taste that smokey sweetness unadorned and pure. Sometimes it's so good you barely need any sauce at all. But not at Casa Valdez. Consequently, all of the meats appeared to have been oven cooked from 4 to 8 hours, then dunked in a bowl of sauce: shake n bake and serve. I will say the potato salad was good and cole slaw was exceptional. Seems like they would most likely cook up a decent sirloin. The service was friendly but distracted. I'd go back, just not for BBQ.
Slow service and would have liked free cups and salsa, but the food was great and my family enjoyed themselves. I had the rellenos, my husband a steak, my daughter's devoured taco salad and a burger. The margarita was made with fresh juice but could use more tequila. Prices were fair.
Absolute best place for ribs in Taos! Try the flan, even if you don't think you have room for it. The staff is friendly and attentive and the atmosphere is comfortable. I had a silver margarita and chips and salsa to start. They have a great collection of southwest art. I highly recommend it to locals and travelers alike.
Hair in my battered fish. Waiting an hour for food when 3/4 their tables are empty is pathetic. Fish and chips was unseasoned and the same quality as a fast food joint. Our glasses were empty for 40 minutes as or Waiter kept ignoring us.
